This recipe is very adaptable…
A great thing about this recipe is that you can adapt it to suit your tastes and what you have available. Do you already use plant milk at home? You can use any variety you like best, or the one your friend or neighbor has a small portion of for you to try! Oat, soy, almond, hemp – the list goes on and they all work.
I love to use peanut butter when I make this cake, but if you don’t like peanuts or have an allergy other butters will work well. Some people prefer almond butter, others like sunflower seed butter – I even know of an awesome chef that puts tahini in everything that nut butter is called for. It’s up to you!
Are you a person who doesn’t like bananas? You can substitute 2/3 cup (160ml) of applesauce for the mashed banana!
Were you trying to help out a local bakery during lockdown by snapping up their self raising flour, and now you have tons? It will work! Use self raising flour in place of plain flour and omit the baking powder and bicarbonate of soda.
Don’t have a loaf tin? No worries! You can use a square cake tin, round cake tin, or muffin tin and the recipe is still delicious! Just reduce the baking time.
